Wet
- 1 cup butter, softened
- 1 cup brown sugar, packed
- ¾ cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 tablespoon buttermilk
- 1 teaspoon white vinegar
- 2 teaspoons red gel food colouring
Dry
- 2 cups all-purpose flour
- 2 tablespoons unsweetened cocoa poweder
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 ½ cups white chocolate chips
> Instructions
- Preheat oven to 350°F. Line baking sheets with parchment paper.
- In a medium bowl, mix together the flour, cocoa powder, baking soda, baking powder, and salt.
- In a large mixing bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, mixing well after each addition.
- Mix in the vanilla, buttermilk, vinegar, and food colouring.
- Gradually add the dry ingredients, mixing until just combined. Careful not to overmix.
- Fold in the chocolate chips.
- Drop tablespoon-sized balls of dough onto prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12-15 minutes, watching carefully. Cookies are done when edges are set but tops still look slightly soft, don't overbake.
- Let cool for 5 minutes on a tray before transferring to a wire rack to cool completely.
